Cuvée 1821 represents the symbol of a success story founded in 1821, it depicts the contemporary attitude of quality drinking. Cuvée 1821 is a combination of different souls: here the human touch meets cutting edge technology and the sensitivity of the winemaker finds virtue in precision. In this Cuvée, creativity becomes a concrete reality.

An excellent aperitif, it can also be served throughout the meal – including dessert – as long as the dishes are not too strongly flavored.

The bouquet is attractively intense; very fruity and aromatic, with hints of wisteria flowers and Rennet apples. The flavour is very well-balanced and appealing, with the extremely delicate almond note that is typical of Glera grapes.

VINIFICATION

The must is obtained by gently pressing a blend of premium Italian grapes. The grapes are stored at precisely 64.4°F and without skins. As a result of a lack of skins, the wine produced is delicate strawberry blonde in color. It is then transferred into pressurized stainless steel tanks, where the secondary fermentation takes place. During this stage the wine develops its signature bubbles, following the traditional Charmat method.

In this Prosecco DOC White Cuvée, the unprecedented encounter between the generous aroma of traditional Glera grapes and the fruity notes of Pinot Bianco makes for an exclusive combination. The exuberant and festive mousse and elegant cordon around of the bright straw-coloured yellow are accompanied by a fresh scent, cradled by woodland nuances. The brilliant effervescence introduces a full, lively palate shot through with an agile drinkability. As an exuberant aperitif, it accompanies oysters and molluscs and delicate cold cuts. It also enhances white pasta dishes and fish baked in sea salt.

Vinification: The must is obtained by very soft pressing of the grapes, then 50% undergoes an initial fermentation at a controlled temperature of 18°C. (64°F.) while the remaining 50% is stored at 0°C. (32°F.) as unfermented must. Lately they are assembled and transferred into pressurized stainless steel tanks where the wine is made sparkling using the traditional Charmat method.

Colour: Bright straw-yellow; a fine, clear mousse with a very delicate perlage.

Bouquet: Attractively intense; very floral and aromatic, with hints of jasmine, Ambrosia apples and cinnamon.

Flavour: Very well-balanced and appealing, fine and crisp, with light notes of acacia honey.

Serving temperature: Serve at 5/7°C. (41/45°F.).

Food matches: An excellent aperitif, it can also be served throughout the meal - including dessert - as long as with gazpacho, won-ton pasta fagottini rolls and eggs benedict.

Extra dry (hint of sweetness as compared to brut), good acidity, vivid fruits thanks to 13% pinot grigio (by rule, Prosecco must be 85% glera, but blends are allowed). Smooth, delicious, persistent bubbles, another example why Prosecco is surging in popularity worldwide—exports up 67% in the past three years; nearing a $2 billion-a-year industry in northeastern Italy.

This effort is part of Zonin’s “Dress Code” collection, a departure for Zonin—previously they only made Prosecco with 100% glera grapes. Zonin was established in 1821 and remains in the family today. Casa Vinicola Zonin is Italy’s largest privately-held wine company. It is located in Gambellara (halfway between Verona and Venice) in the province of Vicenza, the ancestral home of the Zonin family. “Commendatore” Domenico Zonin put the winery on the world map; born in 1899, he lived to be 101, a lifetime spanning three centuries. Gianni Zonin leads the company today; he emphasizes a green approach to ecologically sustainable viticulture and control of the wine process from vineyard to distribution.

This is tasty, easily approachable, laid-back pour. Prosecco is an ideal aperitif, and this fits the bill for a mixed party: sophisticated wine drinkers will appreciate its clean crispness, while less wine-savvy sippers will enjoy its vivid fruitiness.
